Instructions

  1. Preheat oven to 350 degrees. Combine all wet ingredients in a bowl and mix thoroughly.
  2. Combine all dry ingredients in a bowl and mix thoroughly then slowly add dry ingredients to wet ingredients.

 

  1. If batter is thick or not mixing well slowly add almond milk little by little until you reach a cake batter texture.
  2. Spray doughnut pan with coconut oil spray. Carefully spoon in doughnut batter until 3/4 full.
  3. Bake for 12 minutes. While doughnuts are baking melt 2 tbsp butter then set aside. Allow butter to reach room temperature before making frosting.
  4. When butter reaches room temperature, add in swerve confectioner's sugar and mix well. Mix in 1/4 cup coconut flakes. Add 1 tbsp of almond milk as needed to help reach a frosting-like consistency. To color frosting add 2-3 drops blue dye then add 2-3 drops red dye and mix until you reach purple.
  5. Let doughnuts cool. Do not frost when hot- the frosting will melt.
