TRUTH Pumpkin Muffins - By Lisa Niren

 

Although its the middle of summer, its never to early to start thinking about delicious festive holiday protein treats, or just indulge in the perfect muffin as a post-workout snack. These are not only high in protein, but have a healthy amount of complex carbs. You can change any of the ingredients and personalize these by adding your favorite nuts, nut butters, dried fruits or even peanut butter on top.

 

 

 

Ingredients:
- 2 scoops TRUTH vanilla wafer protein       
- 1 cup oats (dry)
- 1 1/4 TSP baking powder
- 1/2 TSP baking soda
- 1/2 TSP cinnamon
- 2 egg whites

 

- 1/2 cup canned organic pumpkin
- 1/4 cup applesauce (unsweetened)

 

- sugar-free sweeter of choice (optional)

 

 

 

Instructions:

 

Preheat oven to 350 F.

 

Mix protein, oats, baking powder, baking soda, and cinnamon in a bowl.

 

In a separate bowl, mix egg whites, pumpkin, applesauce, and sweetener.

 

Combine dry and wet ingredients, mix well.

 

Pour batter into greased muffin tins and bake for 12-14 minutes.
